1.虾洗净去头去壳,去虾线,擦干水分,2/3的虾用料理机打碎,备用

2.1/3的虾切碎后用刀背碾开,颗粒稍大,这样保证之后做出来的虾饼口感好

3.将二者混合均匀

4.加入盐和姜汁、料酒、生粉、黑胡椒和鸡蛋清,用筷子拌匀,向一个方向搅打至虾胶上劲,将拌好的虾滑盖保鲜膜放入冰箱冷藏30min以上

5.准备好生粉、全蛋液和面包糠

6.取一小块腌制好的虾滑,用手掌团成球,过上干淀粉

7.裹上蛋液

8.均匀的裹上面包糠,用手轻压成饼状

9.将所有的虾饼都处理好,油烧热后,将虾饼放入锅中炸至金黄

10.炸好的虾饼捞出沥干油
